STEAM OYSTERS EASTERN STYLE RECIPE ALA VINH PHAT, CABRAMATTA

Western oysters are either freshly shucked with a squeeze of lemon or when cooked - oyster mornay or kilpatrick.  Here, I'm going to show you how to make steam oysters eastern style found in asian restaurants.  This recipe is so delicious and another one of my old time favourites.

Steamed Oysters
Steamed Oysters with Chili, Coriander and Garlic dressing

Serves: 2-4
Preparation time: 5 minutes
Cooking time: 10 minutes
Difficulty: Easy

Ingredients:
1 dozen Sydney Rock Oysters (or Pacific Oysters)
Salt
1 chili or 2 chillis
1 sprig of coriander
2 cloves of garlic
2 slices of lime
1/4 cup of olive oil
1+1/2 tspn of light soy sauce
Optional: Mint leaves

Method:
1. Wash the oysters with water until clean and then pat dry.
2. Steam oysters for 5 minutes then set aside.
3. Place a small pan on high heat and add olive oil.  Fry the garlic until it goes brown and then add coriander, chili and light soy sauce.
4. Pour over the coriander, chili and garlic dressing on top of the steamed oysters.
5. Squeeze lime onto the dressing.

There you have it, really tasty oysters that are so simple to dish up.
